- 1 3/4 cups flour
- 2 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp baking soda
- 1/8 tsp black pepper
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 egg
- 1 Tbsp light molasses
- 1/2 cup seedless raspberry spreadable fruit or orange marmalade
Preheat the oven to 350° F.
Stir together flour, ginger, cinnamon, cloves, baking soda and pepper in a medium bowl.
Place butter, sugar and brown sugar in a large mixer bowl. Beat at medium speed, scraping the bowl often, until creamy. Add egg and molasses; beat until well mixed. Reduce speed to low. Add flour mixture; beat until well mixed.
Shape dough into 3/4-inch balls. Place 2 inches apart on ungreased cookie sheets. Bake for 8 to10 minutes or until lightly browned. Cool completely.
Place 1/2 teaspoonful of jam in the center of the flat side of one cookie; top with a second cookie, flat side down. Press together lightly. Repeat with the remaining cookies.Servings:
