Peach Jam with a Twist

Ingredients:

  • 4 cup ripe peaches, peeled and finely chopped
  • 1 tsp lemon juice
  • 1 box powdered pectin
  • 5 cup sugar
  • 1/4 cup light rum

Preparation:

Combine peaches, lemon juice and pectin in a large saucepan. Bring to a full boil, stirring constantly.

Add sugar and boil for 1 minute. Remove from heat and add rum. Skim and put into sterile jars.

Servings: 3 pints
