Apple Raisin Muffins
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1/2 cup chopped walnuts
- 1 cup milk
- 2 large eggs
- 1/4 cup vegetable oil
- 1 small tart green apple, peeled and chopped
- 1/4 cup golden raisins
Heat oven to 400° F. Grease and flour a 12-cup muffin tin or line with paper liners.
Combine flour, sugar, baking powder, cinnamon, salt and walnuts in a medium bowl; make a well in the center.
In another bowl, mix milk, eggs, oil, apple and raisins in small bowl. Pour mixture into well. Mix batter until just moistened; do not over mix.
Fill prepared muffin tins three-fourths full. Bake for 18 to 20 minutes or until muffins test done. Cool in pan on wire rack.Makes 1 dozen muffins
