Apple Walnut Muffins

Ingredients:

  • 1 1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • 1/4 tsp ginger
  • 1/4 tsp allspice
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 egg
  • 1/3 cup molasses
  • 1/4 cup Canola oil
  • 2/3 cup buttermilk
  • 1/3 cup walnuts, chopped
  • 1/4 cup raisins
  • 2 small Granny Smith apples, shredded with skins on
  • 1 small Granny Smith apple, cored, peeled and sliced

Preparation:

Sift flours, baking soda, cinnamon, ginger, allspice, nutmeg and salt. Set aside. Mix together egg, molasses, oil, and buttermilk. Stir dry ingredients into egg mixture until moistened. Do not over mix.

Stir in two shredded apples, nuts and raisins. Spoon into 12 greased muffin cups or use paper liners. Top each muffin with a slice of apple. Bake 375° F or 25 minutes.
