Applesauce Muffins

  • 1 cup (2 sticks) butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 2 cups applesauce
  • 1 tsp vanilla extract
  • 4 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground allspice
  • 1 cup nuts, chopped
  • 1/2 cup raisins
  • 1 package cupcake wrappers image placeholder

Cream softened butter and sugar in a bowl until light and fluffy. Add eggs, applesauce, and vanilla; mix well. Set aside.

Sift together flour, baking soda, cinnamon, cloves, and allspice; beat into applesauce mixture. Stir in chopped nuts and raisins until completely mixed. Spoon into muffin tins lined with cupcake wrappers.

Bake in a 350° F oven for 10 minutes, or until brown. Remove from oven. Cool on wire racks.
