Applesauce Oat Muffins


  • 1 1/2 cup Quick or Old-fashioned, Uncooked Oats
  • 1 1/4 cup Flour
  • 2 tsp Cinnamon
  • 1 tsp Baking Powder
  • 3/4 tsp Baking Soda
  • 1/2 tsp Salt (optional)
  • 1 cup Unsweetened Applesauce
  • 1/2 cup Firmly Packed Brown Sugar
  • 1/2 cup Oil
  • 1 Egg White or Whole Egg
  • 1 tsp Vanilla
  • 1/4 cup Chopped Nuts


Heat oven to 375° F. Coat 12 medium muffin cups with oil, cooking spray or line with muffins paper. Combine oats, flour, cinnamon, baking powder, baking soda, and salt. Add applesauce, brown sugar, oil, egg white and vanilla. Mix just until dry ingredients are moistened. Stir in nuts.

Fill prepared muffin cups until they are almost full. Bake 20-25 minutes or until golden brown. Serve warm.
