Angel-Hair Pasta with Sun-Dried Tomatoes

  • 1 lbs Oil-packed sun-dried-tomatoes; drained
  • 2 cup Boiling water
  • 3 Cloves garlic
  • 1/4 tsp Salt
  • 1/4 tsp Ground hot red pepper; cayenne (up to 1/2)
  • 1 lbs Dried angel-hair pasta image placeholder

Remove one-quarter of tomatoes and finely slice. Combine remaining tomatoes, boiling water, garlic, salt and hot red pepper in blender. Whirl until smooth, scraping down sides of blender with rubber spatula as needed.

Cook pasta according to package directions. Drain well. Toss pasta with tomato purée and sliced tomatoes in large bowl.
