Angel Hair Pasta With Tomato Scallop Sauce

  • 1 lbs medium scallops
  • 2 Tbsp olive oil
  • 1 medium onion, chopped
  • 1 small green pepper, chopped
  • 1 clove garlic, minced
  • 2 - 16 oz. cans diced tomatoes
  • 1 Tbsp oregano
  • Salt and pepper to taste
  • 1 lbs Angel Hair pasta, cooked
  • Parmesan cheese to taste image placeholder

In a skillet, combine oil, onion, green pepper, and garlic. Sauté over medium heat until tender, not brown. Add tomatoes, oregano, salt and pepper; bring to a boil for one minute.

Reduce heat and simmer for ten minutes. Add scallops and simmer another three minutes. Serve over pasta and top with grated Parmesan cheese.
