Berries on Pastry

  • 1 Sheet frozen puff pastry; thawed
  • 1 lbs Lowfat cottage cheese
  • 2 Tbsp Orange zest; grated
  • 3 Tbsp Sugar
  • 1 cup Raspberries; picked over
  • 1 cup Strawberries; hulled and cutin half
  • 3 Tbsp Orange juice image placeholder

Roll out puff pastry sheet to a rectangle. Bake according to package directions. Let cool. Purée cottage cheese, orange zest and sugar in a food processor or blender 2-3 minutes or until very smooth. Combine raspberries, strawberries and orange juice in a bowl and toss.

Just before serving, spread cottage cheese mixture over puff pastry. Top with fruit and serve.
