Cajun Pastry

Ingredients:

  • 1 cup Rice
  • 1/2 cup Chopped onion
  • 2/3 cup Chopped red bell peppers
  • 2 Cloves garlic; minced
  • 1 cup Chopped celery
  • 1/4 cup Chopped parsley
  • 2 oz. Pimientos; drained
  • 1/4 cup Margarine
  • 1-1/2 tsp Seasoned salt
  • 1/2 tsp Red pepper
  • 10-3/4 oz. Cream of mushroom soup; low fat
  • 1 cup Cooked crabmeat
  • 1 cup Cooked shrimp
  • 8 sm Pie shells

Preparation:

Cook rice according to package directions. Preheat oven to 400° F. In a medium skillet, sauté next 7 ingredients. Add seasonings and mix until blended. Add soup and stir well.

Add crabmeat, shrimp and cooked rice. Stir to combine. Place 1/3 to 1/2 cup of mixture into each pie shell. Bake at 400° F. for 20 minutes.
