- 2 ea Unbaked pie crusts
- 4 cup Water
- 1 1/2 cup Sugar
- 4 tsp Cream of tartar
- 40 ea Ritz crackers
- 2 Tbsp Butter
- 1 tsp Cinnamon
- 1/4 tsp Nutmeg
- Juice and ring of 1 lemon, grated
Make your favorite pie crust (top and bottom). Boil water,sugar and cream of tartar. Add whole crackers, 1 at a time. Boil 2 minutes. Add remaining ingredients. Cool.
Pour into prepared pie shell. Cover with top crust. Slit top for steam vents. Bake at 425° F for 10 minutes.
Reduce heat to 350° F. Continue to bake 20 to 25 minutes or until golden brown.R emove from oven. Cool.Servings: 12
