Preheat the oven to 400° F. Coat the onion and pepper in the olive oil and roast, stirring occasionally, for 1 hour, or until soft. Remove from the oven.
Lower the heat to 350° F.
On a lightly greased baking sheet, spread out the pizza dough. Use a fork to prick the center. Spread the sauce to the edges of the crust and sprinkle on half of the cheese. Top with the vegan chicken and the remaining cheese.
Bake for 10 to 15 minutes, or until the crust is golden.Servings: 4
