Wild Mushroom and Sage Pizza

  • Olive oil 1 1/2 tsp
  • Chanterelles, cepes, oyster, shiitake or button mushroom abour 1-1/2 lb 8 c
  • Onion; sliced 2 c
  • Salt and fresh ground pepper
  • Recipe Quick-Rising Dough 1
  • Cornmeal for dusting peel
  • Part-skim Mozzarella; grated 1 c
  • Fresh sage; chopped or 4 tsp
  • Dried, rubbed 1 ts

Heat oil over medium heat. Add mushroms and onions and sauté for 3 to 5 minutes or until tender. Season with salt and pepper.

Follow directions in Pesto Pizza for handling dough. Sprinkle 2 Tbsp mozzarella over each round of dough. Arrange 1/3 cup mushroom mixture evenly over the cheese. Sprinkle with 1/2 tsp fresh sage or 1/8 tsp dried.
