Califlower Quiche

  • 3/4 cup cooked rice
  • 2 cups chopped cauliflower
  • 1 cup milk
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1 Tbsp dry bread crumbs
  • 1/2 tsp salt
  • 1/8 tsp freshly ground pepper
  • 1/8 tsp ground nutmeg image placeholder

Press the rice onto the bottom and sides of a 9-inch baked pie shell.

Steam cauliflower for 10 minutes or until tender-crisp. Spoon over the rice.

In a bowl combine milk, eggs, cheddar cheese, dry bread crumbs, salt, pepper, and nutmeg. Pour over the cauliflower.

Bake at 375° F for 30 to 35 minutes or until set.
