Mango Corn Relish

  • 2 Ears corn; unshucked
  • 1 Mango; peeled, seeded andcut in 1/4-inch dice
  • 2 Tbsp Finely diced red onion
  • 2 Tbsp Finely diced red pepper
  • 1 Tbsp Finely chopped fresh cilantro
  • 1 tsp Fresh lime juice
  • 1 tsp Maple syrup
  • Salt image placeholder

Preheat oven to 350° F. Place unshucked corn on a baking sheet in preheated oven for 20 minutes. Remove and allow to cool. Shuck and remove silk.

Cut kernels from cob, avoiding the chewy heart alongside the cob. Combine corn with remaining ingredients and let stand for 1 hour before serving.
