Refrigerator Corn Relish


  • 2 cups fresh corn (4 ears) or 1 - 10 oz. package frozen whole-kernel corn
  • 1/2 cup vinegar
  • 1/3 cup cold water
  • 1 Tbsp cornstarch
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped green or red bell pepper
  • 2 Tbsp chopped pimiento
  • 1 tsp ground turmeric
  • 1/2 tsp salt
  • 1/2 tsp dry mustard
  • 1/4 cup Equal® Spoonful*


Cook corn in boiling water 5 to 7 minutes or until crisp-tender; drain. Set aside.

Combine vinegar, water and cornstarch in large saucepan; stir until cornstarch is dissolved. Add corn, onion, celery, pepper, pimiento, turmeric, salt and mustard.

Bring to a boil, stirring frequently. Boil and stir 2 minutes. Remove from heat. Stir in Equal®. Cool.

Refrigerate, covered, up to 2 weeks. Serve with beef, pork or poultry
