Corn and Grilled Pepper Relish

  • 1 cup Roasted corn kernels
  • 1/2 cup Finely diced grilled red bell pepper
  • 1 Tbsp Finely diced red onion
  • 1-1/2 Tbsp Balsamic vinegar
  • 1-1/2 Tbsp Coarsely chopped cilantro
  • 1/2 jalapeños,; minced
  • 1-1/2 Tbsp Olive oil
  • Salt and freshly ground pepper image placeholder

Combine the corn, pepper, onion, vinegar, cilantro, jalapeños, and oil in a bowl and season to taste with salt and pepper.

Servings: 2-1/2 cups
