Corn Relish

Ingredients:
  • 1/2 cup vinegar
  • 1 tsp salt
  • 1/2 tsp mustard seed
  • 2 - 12 oz. cans whole kernel corn
  • 2 tsp minced onions
  • 1 cup sugar
  • 1 tsp celery seed
  • 1/2 tsp red pepper sauce
  • 1/4 cup chopped green pepper
  • 2 tsp chopped pimento

Preparation:

In medium saucepan, heat salt, celery and mustard seed, vinegar and red pepper sauce. Boil 2 minutes. Remove from heat. Stir in corn.

Drain 1 can of corn, add other can without draining. Cool and refrigerate several days so flavor will blend.
