Brown Rice Pilaf

Ingredients:
  • 1 cup Rice brown uncooked
  • 3 Tbsp Olive oil
  • 1 md Onion
  • 2 md Tomato raw
  • 2-2/3 cup Vegetable Broth (home made)
  • 1 tsp Salt
  • 1/8 tsp Pepper

Preparation:

Dice onion. Peel and dice the tomatoes. Add oil to large skillet over medium high heat.

Add onion and rice and sauté about 5 minute stirring constantly until slightly brown.

Add all the other ingredients bring to a boil. Lower heat to simmer, cover and cook for about 1 1/2 hours until rice is tender.
