Bibb Salad with Orange Balsamic Dressing
- 2 Tbsp Orange juice concentrate
- 1/4 cup Balsamic vinegar
- 1 tsp Honey
- 2 Scallions; finely minced
- 3 cup Bibb lettuce (if not available; use romaine)
- 3 Oranges; sectioned
- 5 Chestnuts*; roasted, chopped
This delicious salad is topped with flavorful balsamic dressing and can be assembled in advance: Make the dressing, wash the lettuce, and section the orange the night before and store in separate containers in the refrigerator.
*Substitute 2 tablespoons sliced almonds for chestnuts for quicker assembly. Combine orange juice, vinegar, honey, and scallions in a small bowl. Set aside. Line four salad places with lettuce.
Arrange orange sections on top of lettuce. Top with chestnuts or almonds. Drizzle with dressing.Servings: 6
