Salsa

Ingredients:
  • 1 large tomato, seeded and chopped
  • 1/2 onion, chopped (more if you like)
  • 1 green (or yellow or red or all 3) pepper, seeded and chopped fine
  • 1 1/2 tsp vinegar
  • 1/4-1/2 tsp sugar (this draws out the juices of the veggies)
  • 1/2 tsp salt (or more to taste)

Preparation:

Put all ingredients into a bowl. Mix well. let sit on counter for at least an hour, covered with plastic wrap, stirring every once in a while.

Before serving, add a sprinkling of cilantro, fresh or dried. If you like, you can add a chopped garlic clove. We like to eat it with ff tortilla chips, or on rice. Of course, you can make as big or small a batch as you like. Just play with it, and you'll get the right combo of vinegar, salt and sugar. If you like the heat (which I don't), add jalapeños.
