Mock Alfredo Sauce

  • 2 cups nonfat cottage cheese
  • 1 clove garlic
  • 1 tsp dried onion soup mix
  • 1-2 tsp fresh or dried parsely (for color) image placeholder

Whip all this together in a blender or food processor. Serve at room temperature and pour over hot pasta. Very bright flavor and Alfredo-y!

It's probably a good idea to let it sit an hour or so before serving so that the garlic cools out a little. It also refridgerates well for lunches, etc.
