Baked Cod with Olive-Lemon Butter
- 4 - 6 oz. cod filets
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 Tbsp chopped kalamata olives
- 2 Tbsp butter, melted
- 1 lemon, juiced
- 1 Tbsp chopped fresh chives
Preheat oven to 400° F.
Season cod with salt and pepper and place in a shallow baking dish, large enough to hold fish in one layer. Combine olives, butter, lemon juice and chives.
Mix well and pour over fish. Bake until fish flakes easily with a fork, about 12 minutes. Serve warm.Servings: 4
