Baked Cod with Olive-Lemon Butter

  • 4 - 6 oz. cod filets
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 Tbsp chopped kalamata olives
  • 2 Tbsp butter, melted
  • 1 lemon, juiced
  • 1 Tbsp chopped fresh chives image placeholder

Preheat oven to 400° F.

Season cod with salt and pepper and place in a shallow baking dish, large enough to hold fish in one layer. Combine olives, butter, lemon juice and chives.

Mix well and pour over fish. Bake until fish flakes easily with a fork, about 12 minutes. Serve warm.
