Baked Fish with Bacon Stuffing

Ingredients:
  • 3 cup Soft bread crumbs
  • 1 Tbsp Bacon drippings
  • 1/4 cup Onion; finely chopped
  • 1/4 cup Diced bacon; cooked
  • 2 Tbsp Lemon juice
  • 2 Tbsp Water
  • Seasonings
  • 2 lbs Dressed fish
  • Soft butter or margarine
  • Lemon wedges

Preparation:

Mix together all ingredients except fish, butter and lemon. Place stuffing lightly in cavity of fish; do not skewer. Place in greased baking pan; spread with butter. Bake in a 400° F oven for 40 minutes or until fish flakes easily.

Baste occasionally. Serve with lemon wedges.
