Baked Fish with Vegetables Recipe #2

  • 2 lbs flounder or other fish
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 1 cup fresh mushrooms, sliced
  • 1/2 cup dry white wine
  • 2 Tbsp lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp salt
  • 1/8 tsp freshly ground black pepper image placeholder

Preheat oven to 350° F. Spray a 12x8-inch baking dish with non-stick cooking spray.

Place fish in dish. Mix vegetables together and spread over the fish. Mix wine, lemon juice, parsley, salt and pepper together. Pour over fish and vegetables.

Cover. Bake at 350° F for 30-45 minutes, or until fish flakes easily when tested with a fork.
