Italian Corn Crusted Baked Fish

  • 2 cup Chopped tomatoes
  • 2 Tbsp Minced garlic
  • 1/4 cup Olive oil
  • 1 Tbsp Thyme or oregano
  • 1 lbs Haddock, sole or cod
  • Grated Parmesan cheese
  • 1/2 cup Yellow cornmeal mixed with
  • Salt and pepper (1/2 tsp ea) image placeholder

Mix tomatoes, garlic, oil and thyme in bottom of baking dish. Dip fish in cornmeal and place in dish. Bake at 450° F for 20-26 minutes. Top with cheese.
