Artichoke Soup

Ingredients:

  • 1/4 cup butter
  • 1/2 cup chopped carrotsp
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 1/4 cup flour
  • 2 cup chicken broth
  • 5 cup quartered canned artichoke hearts, incl. liquid
  • 1 bay leaf
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp dried thyme leaves
  • 1/4 tsp dried oregano leaves
  • 1/4 tsp dried sage leaves
  • Dash paprika
  • 1 cup whipping cream

Preparation:

In large saucepan, melt butter. Add carrots, celery, onion and mushrooms; sauté until soft. Stir flour into vegetables and cook 10 minutes. Stir in chicken broth. Add remaining ingredients except whipping cream; simmer 30 minutes.

Remove bay leaf. Beat cream until frothy and fold into soup. Heat thoroughly - DO NOT BOIL.
