Baked Beef Stew

Ingredients:

  • 1 can (14.5 oz.) diced tomatoes; undrained
  • 1 cup Water
  • 3 Tbsp Quick cooking tapioca
  • 2 tsp Sugar
  • 1-1/2 tsp Salt
  • 1/2 tsp Pepper
  • 2 lbs Lean beef stew meat; cut in 1-inch cubes
  • 4 md Carrots; cut in 1 in chunks
  • 3 md Potatoes; peeled and quartered
  • 2 Celery ribs; cut in 3/4-inch chunks
  • 1 md Onion; cut in chunks
  • 1 sl Bread; cubed

Preparation:

In a large bowl, combine the tomatoes, water, tapioca, sugar, salt and pepper. Add remaining ingredients; mix well. Pour into a greased 13x9x2-inch or 3-qt. baking dish. Cover and bake at 375° for 1 3/4 to 2 hours or until meat and vegetables are tender. Serve in bowls.
