Beef Cabbage Stew

Ingredients:

  • 1 1/2 lbs Beef stew meat; cut into 1-inch pieces
  • 2 Beef bouillon cubes
  • 1 cup Hot water
  • 1 lg Onion; chopped
  • 1/4 tsp Pepper
  • 1 Bay leaf
  • 2 md Potatoes; peeled, cubed
  • 2 Ribs celery; sliced
  • 4 cup Shredded cabbage
  • 1 Carrot; sliced
  • 8 oz. Tomato sauce
  • Salt to taste

Preparation:

Brown meat; drain. Dissolve bouillon in water; add to beef. Stir in onion, pepper and bay leaf. Simmer, covered, until tender, about 1 1/4 hours. Add potatoes, celery, cabbage and carrot. Simmer, covered, until vegetables are tender, about 30 minutes. Stir in tomato sauce; cook, uncovered, 15 minutes. Remove bay leaf before serving.
