Adzuki Bean Salad Tofu

  • One 15 oz. can adzuki beans, drained and rinsed
  • 1/2 cup chopped red onion
  • 1 green bell pepper, seeded and chopped
  • 1 celery stalk with leaves, diced
  • 1/2 cup rice vinegar
  • Pinch of salt
  • Pinch of pepper
  • 1/2 tsp dried cilantro
  • 1 cup diced firm tofu image placeholder

Combine all ingredients except tofu; blend well. Gently stir in tofu. Marinate at room temperature for 30 min or in refrigerator for an hour or more. Can be made a day ahead and refrigerated.
