Baked Tofu & Fruit

  • 1/2 block mori lite silken tofu
  • 3 Tbsp honey (or sweetner of choice)
  • 3 Tbsp orage juice
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 lbs parsnips (4 cups) peeled and cut into matchsticks
  • 2 apples cut into 8 wedges each
  • 1 orange or large tangerine, unpeeled, sliced into 1/4 inch roundsooking spray image placeholder

Preheat oven to 325° F. In a large bowl combine tofu, honey, and orange juice cinnamon, and mix well to form a smooth sauce. Add parsnips, apples and orange, salt if using and mix well to coat. Lightly spray a baking dish with nonstick spray and transfer mixture to dish. Cover dish and bake for 30 minutes. Uncover and bake 15 minutes longer to glaze.
