Blanquette of Turkey

  • 3 Tbsp butter
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 Tbsp flour
  • 4 cup chicken broth
  • 1 lbs turkey, cooked, large diced
  • 2 Tbsp parsley, chopped
  • 1/2 tsp thyme
  • salt and pepper to taste image placeholder

Melt the butter in a heavy soup pot. Add the onions, carrots, and celery. Cook until just soft. Whisk in the flour and cook 5 minutes. Add the broth and stir until well mixed. Bring to just under a boil.

Add the remaining ingredients, reduce heat and simmer 45 minutes. Serve warm.
