Baked Doves with Gravy

Ingredients:

  • 18 to 22 doves
  • Salt and pepper, to taste
  • Flour
  • 1/2 cup vegetable oil
  • 1/2 cup chopped scallions
  • 1 1/2 cups water
  • 1/2 cup sherry
  • 1/2 cup chopped parsley

Preparation:

Salt, pepper and flour doves. Brown in oil in Dutch oven at 400° F. This takes about 1 hour.

Add scallions, water, sherry and parsley. Cover and reduce heat to 350° F.

Cook until tender, about 2 to 2 1/2 hours. Makes a wonderful gravy. Serve with wild rice.
