Black Bean Appetizer

Ingredients:
  • 1 lbs dry black beans
  • 1/2 cup chopped onion
  • 3 garlic cloves, crushed
  • 1 tsp salt
  • 1/4 cup chopped fresh cilantro
  • 1 lbs tortilla chips

Preparation:

Sort dry black beans and soak overnight covered with water in a stockpot.

Drain soaking water, refill stockpot with fresh water, and bring to a boil. Reduce heat and simmer, covered, for 1 hour. Add onion, garlic and salt. Cook for 2 hours, or until thick. Sprinkle with cilantro. Serve with tortilla chips.
