Greek Style Bean Paté

Ingredients:
  • 3 cups cooked navy beans, drained, rinsed
  • 1/2 cup fresh lemon juice
  • 1 Tbsp garlic, minced
  • 2 Tbsp red onion, minced
  • 1 tsp fresh cilantro, minced
  • 2 Tbsp fresh parsley, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

Preparation:

In blender or food processor, purée beans. Transfer to a bowl. Stir in remaining ingredients except salt and pepper. Cover bowl and refrigerate at least 4 hours, preferably overnight.

Before serving, add salt and pepper.
