Barbecue Style Spanish Rice

Ingredients:
  • 1 can (16 oz.) tomatoes, chopped
  • 1 cup quick cooking rice, raw
  • 1/2 cup green pepper, finely chopped
  • 1/4 cup onion, finely chopped
  • 1/4 cup water
  • 2 tsp Worcestershire sauce
  • 1 tsp sugar
  • 3/4 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp basil, dried
  • 1 Tbsp butter or margarine

Preparation:

In heavy 8-inch skillet combine undrained tomatoes, rice, green pepper, onion, water, worcestershire sauce, sugar, salt, chili powder and basil. Dot mixture with butter. Cover skillet and cook on grill with medium to hot coals. Cook for about 20 to 25 minutes stirring occasionally. Add more water if needed. Before serving, fluff rice with a fork.
