Cantonese Barbecued Spareribs

Ingredients:
  • 2.2 lbs pork spareribs
  • 3 Tbsp light soy sauce
  • 1 1/2 tsp honey
  • 1 1/2 Tbsp hoisin sauce
  • 1 1/2 Tbsp rice vinegar
  • 1 Tbsp Chinese yellow wine (hua tiao jiu)
  • 2 cloves garlic, chopped
  • 3 tsp sugar
  • 1 1/2 Tbsp chicken stock, or water

Preparation:

Buy spareribs with lots of meaTbsp Wash and pat dry with paper towels. Mix together soy sauce, honey, rice vinegar, wine, garlic and sugar. Pour over the spareribs. Marinate at room temperature for 3 hours or in the refrigerator for 6 hours. Turn the spareribs over every hour and stir marinade well. Pre-heat oven to 350° F.

Place a roasting rack on a baking tray. Put about 1/2 cup water into the tray to catch the drippings and put the spareribs on to the rack. Roast for 45 minutes, turning once during cooking time. Baste several times with marinade. Raise the oven heat to 400° F and roast for 15 minutes until the spareribs are crispy and brown.
