Cut 4 one-foot square sheets of foil and spray with cooking spray.
Cut flounder into 4 oz. portions and place on foil. Top with sliced onion and green pepper. Add 2 Tbsp barbeque sauce and 1 Tbsp grated cheese on each portion. Bake at 350° F for 20 minutes.
Serve with rice pilaf, fresh carrots and corn muffins.
