Peppys Barbecue Chicken with Jamaican Fried Dumplings

Ingredients:
  • 4 Tbsp tomato ketchup
  • Juice of 1 large lemon
  • 2 Tbsp soy sauce
  • 1 Tbsp dark brown sugar
  • 1/2 tsp ground allspice (Jamaican pepper)
  • 1/2 tsp cayenne pepper
  • 1/2 tsp salt
  • 4 skinless, boneless chicken breast halves
Dumplings Ingredients:
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp dried thyme
  • 2 Tbsp finely chopped parsley
  • 1/2 tsp salt
  • 3/4 cup milk

Preparation:

In a large bowl, mix together the ketchup, lemon juice, soy sauce, sugar, allspice, cayenne, and salt.

Add the chicken breasts, stirring to coat in the marinade, then cover and set aside for 20 minutes or so.

Meanwhile, make the dumplings: mix together the flour, baking powder, herbs, and salt. Beat in the milk to make a thick batter.

Heat 2 inch of oil in a wok or deep frying pan-the oil should be hot enough so that when a cube of bread is added to the pan it browns in about 1 1/2 minutes.

Cook spoonfuls of the mixture, in batches, for 3-4 minutes until puffed, golden brown, and cooked through. Drain on paper towels.

Cook the chicken on a hot barbecue or in an oiled griddle pan for 8-10 minutes on each side until well browned and cooked through.

Serve with mixed salad leaves drizzled with olive oil and lemon juice.
