Arrange chicken breasts in shallow baking dish, pour the pineapple/orange juice concentrate over all. Dot with butter and add the ginger and soy sauce.
Bake in 350° F preheated oven for about 30 to 40 minutes.
To serve, arrange a bed of buttered rice on a heated platter and arrange the chicken over all.
Pour sauce over and arrange slices of avocado and macadamia nuts over all.
