Santa Fe Chicken Chili

Ingredients:
  • 1 Tbsp olive oil
  • 3 Tbsp minced onions
  • 1/2 tsp minced garlic
  • 15 oz. great northern beans, rinsed & drained
  • 15 oz. kidney beans, undrained
  • 5 oz. chunk white chicken in water, drained
  • 4.5 oz. green chilis, chopped
  • 1 cup chicken broth
  • 1/2 tsp chili powder
  • 1/2 tsp cumin

Preparation:

Sauté the onions and garlic over medium heat in the oil for three to four minutes. Stir in the rest of the ingredients and bring to a boil. Reduce the heat and simmer for ten minutes or until slightly thickened and hot. Serve topped with sour cream.
