In a mixing bowl, cream shortening and 1 cup sugar until fluffy. Beat in eggs and anise seed. Combine flour, baking powder and salt; stir into creamed mixture.
Add apple juice and mix well. On a floured surface, knead dough until well blended (4-5 minutes).
Roll dough to 1/2 inch thickness and cut into desired shapes using cookie cutters. Place on greased baking sheet.
Bake at 375° F or 12-16 minutes or until lightly browned. Combine 1/2 cup sugar and cinnamon; roll cookies in mixture while still warm. Cool on wire rack.
