Black-eyed Pea Dip

Ingredients:
  • 1 med. onion, chopped
  • 1 Tbsp butter
  • 1 - 15 oz. can black-eyed peas
  • 1 - 15 oz. can artichoke hearts
  • 1 Tbsp Parmesan cheese
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 pkg. ranch dressing mix
  • 4 oz. Mozzarella cheese

Preparation:

Sauté onion in butter. Rinse and drain peas. Drain and chop artichoke hearts. Add peas, artichokes, Parmesan cheese, sour cream mayonnaise, and ranch dressing mix to onions.

Bake 20 minutes at 350 ° F. Add Mozzarella cheese on top and heat until it melts. Serve with corn chips.
