Mexican Seven-layer Dip

Ingredients:
  • 3 med. avocados
  • 3 tomatoes, seeded and chopped
  • 1 cup sour cream
  • 1 pkg. taco seasoning mix
  • 1 cup scallion, chopped
  • 7 oz. black olives, chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup mayonnaise
  • 21 oz. bean dip (plain or jalapenño)
  • 8 oz. cheese, shredded
  • tortilla chips (preferably unsalted)

Preparation:

Peel, pit, and mash avocados in medium bowl; add salt and pepper. In separate bowl, combine sour cream, mayonnaise, and taco seasoning.

To assemble, spread bean dip on a large, shallow platter, top with avocado mixture, spread sour cream and taco mixture, sprinkle with scallions, then tomatoes, and then olives.

Cover with shredded cheese. Enjoy.
