Lime Duck

Ingredients:
  • 2 ducks
  • 4 strips bacon
  • 1 cup fresh lime juice
  • 1/4 to 1/2 cup orange juice

Preparation:

Marinate ducks in lime juice for 2 hours. Place ducks and marinade in Dutch oven, salt and pepper lightly, and bake at 325° F for 2 1/2 to 3 hours, until duck almost falls off bone. Baste with orange juice when ducks become dry about the last hour of cooking.

About 30 minutes before serving, cover each duck with 2 strips of bacon.
