Armadillo Eggs

Ingredients:
  • 1 lbs sausage at room temperature
  • 8 oz. Monterey Jack or Cheddar cheese, grated
  • fresh jalapeños; 2" long
  • 1 1/2 cup biscuit mix
  • 2 eggs
  • 1 box pork flavored oven fry

Preparation:

Wash jalapeños; slice in half lengthwise but do not completely cut through. Seeds can be removed; stuff with cheese. Mix sausage and biscuit mix and any remaining cheese and put about a golf ball size in your hand, spread out until it will cover the jalapeño completely. Dip in beaten egg and roll in oven fry. Place on cookie sheet and bake at 325° F or about 30-35 minutes or until browned.
