Canadian Baked Eggs

Ingredients:
  • 8 Eggs
  • 4 slices Canadian bacon
  • 1-1/2 cup Shredded fat-free cheddarcheese
  • 2 tsp Parsley; finely chopped

Preparation:

Preheat oven to 325° F. Line bottom of 4 lightly buttered shallow ramekins or individual gratin dishes with bacon, cutting to fit, if necessary. Carefully break 2 eggs into each dish. Sprinkle cheese over top and bake 12-15 minutes, until whites are just set and cheese is melted. Sprinkle with parsley and pepper to taste before serving.
