Creamed Eggs

Ingredients:
  • 4 hard boiled eggs
  • 1/4 cup butter or margarine, melted
  • 2 Tbsp flour
  • 2 cup milk
  • 1 med. onion, thinly sliced
  • salt and pepper to taste

Preparation:

Melt butter in frying pan. Brown sliced onions. Remove from pan. Add flour and stir until bubbly. Add milk slowly, stirring constantly. Slice hard boiled eggs into sauce and stir in onions. Serve over boiled white rice or biscuits. You may add peas at the same time as the eggs and onions.
