Scramble eggs well in a medium mixing bowl. Add cumin, Garam Masala, and coriander; beat into eggs Spray PAM in a frying pan; sauté onion, diced tomatoes, and jalapeños.
Add egg mixture. Scramble until eggs are cooked, then add cheese, cover, and remove from heat. Allow the cheese to melt in the warm eggs. In a separate non-stick frying pan warm the flour tortillas. Serve immediately
