Pickled Eggs

Ingredients:
  • 2 medium cans sliced beets
  • 1 cup sugar
  • 1-1/4 cup vinegar
  • 1/2 tsp cloves
  • 1/2 tsp salt or onion salt
  • 3 doz. hard boiled eggs

Preparation:

Drain beets and save juice. In a saucepan combine all ingredients except eggs and beet slices. Bring to a boil and then simmer for a few minutes. In a gallon jar layer 1dozen eggs and 1/3 of the sliced beets. Repeat layering. Pour liquid over layered eggs and beets. Refrigerate for at least 3 days.
